
Camp Carnitas Tacos
Get ready to tuck into these full-flavored tacos! End your day at camp with a savory combination of flavors: carnitas topped with pico de gallo and creamy avocado, all wrapped in a warm flour tortilla. We suggest prepping your carnitas or pork shoulder ahead of time to reduce prep at camp.
- 2 lbs of pre-made carnitas or roasted pork shoulder/butt
- White Onion, diced
- Cilantro, diced
- 4 fresh limes or lime juice
- Flour tortillas
- Ripe avocado
- Salt and pepper
- Salsa and hot sauce, to taste

If preparing ahead of your camping trip, you can roast a small pork shoulder in the oven, shred and bring it with you for an easy group meal that puts the whole camp to work without breaking a sweat. Alternatively, you can often find pre-marinated carnitas at your local grocery store or market. For this preparation, we used a pre-cooked carnitas that gave our campers an easy way to work together. All we needed to do was heat the pork in a skillet on the stove. To prepare the meal, work as a group to make the toppings. Dice one white onion, cilantro to taste, the juice of three limes, and plenty of salt, into one bowl. Carefully de-pit your ripe avocados and slice into segments, or, add some garlic, cilantro, salt, pepper, and a little lime for an easy mashed guacamole. Gently heat the flour tortillas, enough for the whole group, and top them with your toppings of choice. There are no rules for group tacos! Vegetarian? Skip the meat and sauté mushrooms, onions and some leafy greens. Prefer fish? Likewise, you can sauté it and top with fresh guac and hot sauce with a spritz of fresh lime. Enjoy fun and simple tacos together and bask in your group effort.
